Storing Carrots for the Winter

This year I pulled out a lot of carrots — too much for us to eat right away.  I decided to store them in a way that my neighbors (who are garden masters!) always store their carrots for the winter.  First my daughters and I took all the greens off of the veggies…

Then we filled a bucket full of sand and put the carrots into the sand to store for the winter.  That is it!  I don’t really like frozen carrots…never heard of canned carrots …so this will probably be the best way to store them as long as possible.  We will see!  This is an experiment for me this year.  I hope it works!

Also, my plan was to can the beets – I LOVE beets on my salads…

BUT let this be a warning to all…do not harvest your beets and think they will be okay to sit outside for a couple days until you get to them.  They are now mush 🙁
